Chicken Ghee Roast

Chicken Ghee Roast is a very popular Mangalorean dish and is an absolute delight to eat. This dish is an ideal combination of chicken with spices which is roasted in ghee. It is a spicy and delicious dish. This chicken ghee roast is a tasty and tangy side dish and is usually served with neer dosa, appam, pulao, biryani, rice and side dishes for lunch and dinner.

For Chicken Ghee Roast

  • ¼ Cup ghee
  • 2 Onion, sliced
  • ½ Teaspoon jaggery powder
  • 1 Sprig curry leaves

Preparation Method For Chicken Ghee Roast

To Prepare Masala

  1. Heat a pan with 8 Thillai’s Kashmiri Chilli, ¼ cup coriander seeds, 1 teaspoon Thillai’s Cumin seeds, 1½ teaspoons Thillai’s Fennel seeds, 4 pods of Thillai’s Cloves, ¼ teaspoon Thillai’s Fenugreek seeds, ½ teaspoon Thillai’s Black Pepper and roast everything until it turns aromatic.
  2. Transfer the spices into the blender and add 7 garlic cloves, ½ inch ginger, ¼ cup tamarind juice or 2 teaspoon tamarind sauce and water
  3. Grind the mixture to a smooth paste and set aside.

To Marinate

  1. In a bowl add 1kg chicken, ¼ cup curd, ½ teaspoon Thillai’s Erode Turmeric Powder, salt and the ground masala paste.
  2. Mix well until all the masalas are coated thoroughly on the chicken pieces and rest them for at least 30 minutes.

To Prepare Chicken Ghee Roast

  1. Heat a pan with ¼ cup ghee, 2 onions and saute until it turns into soft.
  2. Now add the marinated chicken and mix well.
  3. Cover the pan with the lid and cook for 15 minutes.
  4. Open the lid and give a nice mix. And allow the chicken to boil for another 10 minutes or until chicken cook well.
  5. Add the ½ teaspoon jaggery powder and give a good mix.
  6. Finally, add 1 spring curry leaves and mix.
  7. Now the Chicken Ghee Roast is ready for you to taste and enjoy

To Serve

  1. Serve the delicious Chicken Ghee Roast with biryani, jeera rice, or white rice.
