Fish Ghee Roast

Fish Ghee Roast is another cuisine of Mangalore and Udupi. And it goes very well as a side dish or starter in a South Indian meal. This is a perfect side dish with appam, neer dosa or Malabar paratha. It is easy to make and can be served as an appetizer also.

For Marinate

For Frying

  • 4 Tablespoons oil

For Masala Paste

  • 2 Tablespoons ghee
  • 1 sprig curry leaves

Preparation Method For Fish Ghee Roast

To Marinate

  1. Wash and clean the rohu fish thoroughly.
  2. In a bowl, add 500g rohu fish, ½ teaspoon Thillai’s Erode Turmeric Powder, 2 teaspoon ginger & garlic paste and salt. Marinate the fish and set it aside for 20 minutes

To Frying

  1. Heat a pan and add 4 tablespoons of oil.
  2. Add fish pieces and fry them for 4 minutes on each side on medium flame.
  3. Continue the process till all the fishes are fried and cooked.
  4. Lay them on an absorbent paper to drain the excess oil.

To Preparing The Masala

  1. Heat a pan and roast 1 teaspoon asafoetida, 8 Thillai’s Kashmiri Chilli, ½ teaspoon coriander seeds and ½ teaspoon Thillai’s Cumin seeds.
  2. Add ½ teaspoon Thillai’s Fenugreek seeds and ½ teaspoon Thillai’s Mustard seeds. Roast them on medium flame for 2 minutes.
  3. Transfer them to a grinder. Add 5 garlic cloves, 1 teaspoon tamarind paste and water. Blend well to make a fine paste.

To Fish Ghee Roast

  1. Heat a medium size wide pan with 2 tablespoons of ghee.
  2. Add the masala paste and fry the masala on medium flame till it starts to separate the ghee. It takes about 8 – 10 minutes.
  3. Add the 1 spring curry leaves and reduce the flame to low.
  4. Now spread the masala on the pan and add the fried fishes into the pan and mix well with the masala.
  5. Gently flip the fishes around so that the masala spreads well on the fish. Cook for 2 minutes on medium to low flame.
  6. Fish Ghee Roast is ready to serve.
