Mutton Mandi Biryani

Originally an Arabic dish, this Mutton Mandi Biryani has slowly found ways to be included in Bakri-Eid festivals all around the world. It is cooked in mutton stock itself which is why every bite feels like a piece of flavourful heaven.

  • 750g Mutton
  • 4 Cup Basmati rice
  • 1 Cup Chopped onions
  • 1 Cup Tomato puree
  • 2 Tablespoon Ginger garlic paste
  • 4 Tablespoon Butter
  • 1 Tablespoon Chopped coriander leaves
  • 4 Tablespoon Lime juice
  • 10 each Almond and cashew
  • 2 Tablespoon Green chilli paste
  • 1 Teaspoon Thillai’s Erode Turmeric Powder
  • 1 Teaspoon Thillai’s Guntur Chilli Powder
  • Salt as required
  • Oil as required

For Mandi Masala

Preparation Method Mutton Mandi Biryani

  1. In a blender jar add 1 teaspoon Coriander seeds, 1 tablespoon Thillai’s Cumin seeds, 2 Star Anise, 5 Dried red chilli, 8 Thillai’s Clove, 8 Thillai’s Cardamom and blend well all the whole spices. This powder is the mandi masala.
  2. In a bowl, add clean and dry 750g mutton pieces, the mandi masala powder, salt and 2 tablespoon green chilli paste. Let this marinate for minimum 30 minutes and maximum 4 hours.
  3. In a cooker add oil, 2 bay leaf, 2 Thillai’s Clove, 2 Thillai’s Cardamom 2 tablespoon ginger garlic paste, 1 cup onion, 1 cup tomato puree one by one and cook properly. To this add 1 teaspoon Thillai’s Erode Turmeric Powder, 1 teaspoon Thillai’s Guntur Chilli Powder, some salt and finally the mutton.
  4. Let the mutton cook in the gravy for 5-10 mins. Now add one cup water and let the mutton cook for 2 whistles.
  5. In a bowl, soak the 4 cup basmati rice for about 30 mins.
  6. Open the cooker and remove all mutton pieces from it.
  7. In another pan, add this mutton gravy and rice and let it cook until rice is fluffy.
  8. In another pan, heat 4 tablespoon butter and slightly fry 10 almonds and 10 cashews.
  9. Remove nuts and fry the mutton pieces for 5-10 mins or until light brown.
  10. In the pan with rice, add fried mutton pieces on top, 4 tablespoon lime juice, nuts and 1 tablespoon coriander leaves.
  11. Use the coal smoking method if you like at this point.
  12. Now Mutton Mandi Biryani is ready
  13. Serve this deliciousness and enjoy!
