Railway Mutton Curry

Railway Mutton Curry was developed by the chefs of the Indian Railways. This curry is a lovely fusion of English spices  like pepper, bay leaves, cloves, nutmeg, cinnamon, and Indian condiments such as chilies, cumin, coriander, turmeric, ginger, garlic etc. This dish is  a mellowed down version of the Spicy Mutton Curry . Serve hot Railway Mutton Curry with rice, bread or dinner rolls.

    Ingredients

    • For Gravy

      • 3 tablespoon Mustard oil
      • 2 Bay leaves
      • 1 Onion finely chopped
      • Salt to taste
      • ½ teaspoon Sugar
      • 5 Thillai’s Cardamom
      • 1 inch Cinnamon
      • 4 Thillai’s Cloves
      • 2 large Potatoes quartered
      • 2 teaspoon Ginger paste
      • 2 teaspoon Garlic paste
      • 3 medium Tomatoes pureed
      • 1/4 cup Yogurt
      • 1 teaspoon Nutmeg powder
      • Fresh coriander sprigs for garnish

    Method

    To Marinate

    1. Take 500gm mutton pieces in a bowl, add ½ teaspoon Thillai’s Erode Turmeric Powder, 1 teaspoon Thillai’s Guntur Chilli Powder, salt, 1 ½ teaspoon ginger paste, 1 ½ teaspoon garlic paste, 2 teaspoon mustard oil and ¼ Cup yogurt and mix well. Keep aside to marinate for at least 3 hours.

    To Make Paste

    1. Heat a non-stick pan, add 1 teaspoon Thillai’s Fennel seeds, 1 teaspoon Thillai’s Cumin seeds, 1 teaspoon Thillai’s Black Pepper and 2 teaspoons Dried red chillies, mix and dry roast till fragrant.
    2. add 1 inch ginger and 5 garlic cloves in a blender jar, add the roasted spices, 1 teaspoon Thillai’s Nattu Malli Coriander Powder, 2 tablespoon mustard oil,  1/2 teaspoon Thillai’s Guntur Chilli Powder and add little water and blend to a fine paste.

    To Make Gravy

    1. Heat 3 tablespoon mustard oil in a pressure cooker. Add 2 bay leaves and 1 onion, mix and saute. Add a little salt and ½ teaspoon sugar, mix well and continue to saute.
    2. Meanwhile, heat the same non-stick pan, add 5 Thillai’s Cardamoms, 1 inch cinnamon and 4 Thillai’s  Cloves and dry roast till fragrant. Transfer into a blender jar and blend coarsely. Put this into the cooker, mix well and saute till onion turns brown.
    3. Add 2 potatoes, mix well and saute for 4-6 minutes. Add 2 teaspoon ginger paste and 2 teaspoon garlic paste, mix and sauté for 1-2 minutes.
    4. Add 3 medium tomato puree, mix well. Add a little salt and saute well
    1. Reduce heat and add yogurt to the cooker, mix well and cook for 4-5 minutes.
    2. Add the marinated mutton, add the spice paste and mix well. Cook for 3-4 minutes. Add 1 teaspoon nutmeg powder and mix well. Place the lid on and cook under pressure for 4-5 whistles. Allow the pressure to settle completely.
    3. Switch off the stove and transfer into a serving bowl. Garnish with coriander sprigs

    Now serve hot Railway Mutton Curry
